Kanel & Cinnamon

Cinnamon Boost Balls

Melt together 140g almond butter with 40g honey. Add in 80g oats, 1 tsp cinnamon and a pinch of salt. You might need to add some water for it to combine. Roll into 8 balls, think compact - and energy dense, say what! Store in the fridge for up to 2 weeks or in the freezer for up to 3 months - so you might as well make a quadruple batch while you’re at it!

Can’t get hold of almond butter - make your own! Just roast almonds in the oven and blend until creamy. Add salt if you want. I just wing it with the roasting and blending, but I’m sure can find a solid recipe if you look online.

Kanel Boost Balls

With Cinnamon bun day around the corner, I thought I’d leave you with three cinnamon treats that are nothing like your traditional bun. Enjoy!

Check out my instagram recipe highlights for my take on these cinnamon-inspired treats!

Cinnamon tea

Let 1 cinnamon stick simmer in 250ml water for 15 minutes. Add lemon or honey if you wish. If you add lemon, take a moment and notice how the colour of the tea changes - wonderful things happening in that mug right there!

Raw cinnamon buns

Luke Skywalker’s cinnamon buns to be more specific. Why Luke Skywalker’s? Well, Food pharmacy call our good bacteria in the gut Luke Skywalkers, and these buns are filled with good stuff that our Luke Skywalkers in the gut like! Recipe coming right up, and may the 4th be with you!

“Dough”

2 dl cashew nuts

1 dl oats

1 dl desiccated coconut

1 pinch of salt

8 dates (pitted)

3-4 tsp water

Filling

1 dl almonds (ideally soaked over night)

1 tbsp ground cinnamon

8 dates (pitted)

1 tbsp water

Roast the cashews and the oats in the oven at 100°C for 10 minutes.

Blend all the ingredients for the dough and roll it out between two sheets of parchment paper.

Bland the ingredients for the filling, and spread it evenly on the dough.

Roll the sheet like a swiss roll and put the fridge quickly. After a while, grab the roll from the fridge and slice it up.

Sprinkle some dessicated coconut or diced almonds on them. And enjoy!
